Due to recent events, I decided to eat healthier by having more vegetarian meals throughout the day. I am aware that there are many, many vegan and vegetarian blogs out there that consist of only those topics. If you are a daily reader of mine, then you would know that my focus on my blog usually is about literature and my writing. However, I am also passionate about food.
Growing up in a carnivorous household, I did have vegetables but we were not as conscious of how we cooked our food. I mean, you could have brussel sprouts but if you cook it in a crapload of cholesterol-filled butter, then that would defeat the purpose of the word “vegetable”. Joking aside, I am more conscientious of what I eat, so I enjoy cooking. For about two years now, I have been munching on vegan treats from Trader Joe’s (the dried seaweed is my favorite) and drinking lots of detoxifying tea and spinach drinks. I also really enjoy chia seeds added in grape juice; the drink is my favorite go-to drink when I am hungry but don’t want to eat.
Now, for all my carnivore friends, I do eat the occasional Quarter Pounder from McDonald’s but not as much as I used to. I find that I have more energy when I eat healthily.
Anyway, here is my home garden filled with a variety of herbs (basil, oregano, rosemary) and vegetables/fruits (eggplants and tomatoes):
For dinner, I made a vegetarian Eggplant Siciliana with an organic eggplant (yes, from my backyard). The pasta was gluten-free and the sauce was homemade. The aromatic blend of dried herbs also caught my mom’s attention, by the way. She is still my biggest critic, so that was very surprising.
